Curried Zucchini Soup
This delicious soup is extremely easy to make. A great use for excess zucchini!
2T olive oil
1 large onion - chopped in small pieces
1T curry powder
salt (to taste)
4 small zucchini -chopped in small pieces (or one rather large one)
1 litre chicken stock
Heat oil in large pot. Stir in chopped onion. Season with curry powder and salt. Saute till tender. Stir in chopped zucchini. Cook till tender. Pour in chicken stock. Cover pot. Bring to boil. Simmer till tender (approx. 20 min). Remove from heat. Use a hand blender to blend till almost smooth.
